The Dandelion

I find the dandelion a most beautiful plant whether coming in bloom or going out of bloom.
There are numerous health benefits to the dandelion which is a completely edible plant.

Providing antioxidants, reducing cholesterol, regulating blood sugar, reducing inflammation, lowering blood pressure, aiding weight loss, reducing cancer risk and boosting the immune system

The entire plant can be tossed in a salad, sauteed which helps eliminates bitterness, or made into coffee or tea.
